Tonight is leftovers - vegetarian chili over brown rice. I bought a Hilary's vegan chocolate coffee cookie for dessert. They're one of my favorites! :yummy:

My "Measure for Measure" gluten free flour came yesterday from King Arthur. Our DIL has gone gluten free and our son wants Beef Pot Pie for our family Christmas dinner on Dec 28th. I think it's an odd choice, but he loves the stuff and that's what he wants. Well, I've never tried making pot pie squares with gluten free flour, so I'm experimenting tonight. Rick and I are going to have beef and gluten free pot pie squares for dinner.

This particular KA flour says that it can be substituted for pretty much any "non-yeast" recipe, cup for cup. You don't have to add xanthum gum or anything to the flour; everything is already in it. I'm curious to see how it will work in pot pie dough. KA specifically says NOT to use the flour in recipes that call for yeast, so it shouldn't be used to make bread, sticky buns, etc. Reviews on the flour are positive overall, with many people saying that you don't really know it's gluten free.

This is not a pie. The dough (flour, egg, baking powder, salt, and water) goes together and then is rolled out on a lightly floured surface. Cut the dough into squares, then let the squares stand on the counter for a few minutes. And drop the squares into the simmering beef, potatoes, and broth. Cook about 20-25 minutes. You can make it with beef, turkey, even ham, although I'm not personally fond of ham pot pie....turkey pot pie isn't bad.

I'm going to be pretty careful putting the dough together and see how it rolls out. See how long it needs to cook versus my regular recipe. If that works, I'm going to try the flour in peanut butter cookies; our DIL is a big fan of peanut butter and that will give her some cookies to eat with dessert.

I took some chicken thighs out of the freezer last night. I'll season them and throw them in the casserole crock pot around 9:00 or so with some chicken stock and some brown rice. I'm thinking of a baked sweet potato as a side; they're huge and Rick and I can split one.

We had turnip roots roasted in the oven, smoked sausage, sautéed fresh broccoli. Yum.

I've been living on sandwiches for two days now, so as not to mess up my scrubbed kitchen. My inspection was this morning, I passed. Tonight is pork chops with a sweet onion/sour cream gravy and mashed potatoes. I' making two chops, so that'll be tomorrow night, as well!

What's for dinner? Whatever Rick makes. I have a meeting right after work and probably won't get home til after 6:00. Whatever he feels like making (or buying, as the case may be, since he's doing some shopping tonight) works for me.

Last night we had pork steaks with rice pilaf I made with Trader Joe's Rice Trilogy (good stuff). I threw some lima beans into some leftover chicken broth, drained, and then slapped on a little pat of butter. I made a bit of a sauce with reduced balsamic vinegar and then added the caramelized onions that I browned the steaks in. It was really good.

Tonight: It's Not Delivery; it's Digiorno's. (They were on sale the other week at 2 for $10. I had a Buy 2, Get 1 Free coupon, plus $2 off a pan pizza and they let me use both of them, so it was a good time to buy them.) Rick is bowling early tonight and he has a union meeting right after work. I'm thinking he'll have just enough to run in the door, inhale a couple slices, grab his shower, and head back out again.

It probably is going to include collards. I have ten pounds of them in the garage waiting to be cooked.
I found a package of venison cube steak in my freezer that some friends gave us. I think I will get that out and make it with some gravy. Then that calls for a big bowl of "Kitchen Aid" mashed potatoes. Maybe it is just me, but it seems to me the mashed potatoes creamed with my Kitchen Aid are creamier. So it is going to be a comfort food meal for us tonight.

We didn't have Digiorno's last night.

We had some sliced ham in the fridge, Rick had bought some baby Swiss at our local cheesemaker last Friday while he was out running around. I made Monte Cristo sandwiches. Delicious! We ate our sandwiches. Rick looked at me and said, "Another?" So we each had another! Yum!
