I live in a good size city/completely urban area. My local Petco/Petsmart doesn't sell the brands of wet food I need for my cats either.
You won't find very many novel protein canned foods at chain pet stores. You have to look for them at independent pet stores or buy them online. Most pet food web site have a store locator you can use to find a local store. It's best to call the store and make sure they have what you need or can order it. Sometimes they sell a brand but only the dog formula :rolleyes:

I just want to say I feel your pain. When we suspected a chicken allergy I likewise was reading a lot of labels and finding chicken liver in almost everything. Natures Instinct was off and on with supplying their LID to Canada so was not reliable for us. Luckily our guy could do fish and duck so we turned to Natural Balance duck and pea or salmon and pea until we transitioned to raw and found they all loved beef, wild boar and lamb. Some brands/proteins had bone while others did not so with help from our pet food store we bought a product called irRAWsistible which is 100% natural sourced eggshell calcium. (Mught be Canadian but surely similar could be ordered?) Could he have something like that added to his fav beef? Is he ok with eggs?
Oh, and unlike bone you can cook eggshell if you want to cook the beef instead of raw.
