I took some country-style spare ribs out of the freezer last night. Trying a Cook's County recipe for BBQ ribs that use spare ribs instead of baby backs. With a bit of potato salad. And either some baked doughnuts for dessert (it's a King Arthur recipe) or I'm thinking of trying a recipe for Chocolate Pretzel Cookies from The Southern Cookie Book.

If my mint is up in the garden, I'll make some mint tea. I need to go out and check.

Tomato sandwiches. On Friday, Krys (my friend who visited from out of state) and I went to Willis Farms produce market and got some absolutely beautiful vine-ripened tomatoes. Also scored some sweet corn and gorgeous strawberries. Found out that cooking the corn, still husked, in the microwave works WONDERFULLY, and there's no silk to clean! Ate the last of the strawberries for my supper last night...oh, stop laughing...they won't keep that long and I certainly wasn't about to waste any of them. Or, at least, that's my story and I'm sticking to it! I need to use the tomato that's left pretty soon while it is at its peak. I still have two ears of corn left, but they will keep for a few days.

Tomato sandwiches are the best thing in this world. With some mayo, onion and salt. Fresh con on the cob is the second best thing.

We have some leftovers: spare ribs from yesterday (which were wonderful!, BTW, man that dry rub is good) and some goulash from Saturday night. Rick has already laid claim to the ribs, so I guess the goulash is mine.

Have to use up the steak I took out of the freezer. it is thawed, so it has to be cooked today.. and the haricot verts... thin green beans.. before they go bad...

LOL...tomatoes, again! I still have almost half of the last one, sliced. I shall toast two slices of bread, plop a slice of tomato on each, top with cheese and run under the broiler till the cheese melts! Whatever tomato is left will be served with a dab of mayo, salt and pepper as dessert!

Steak with a spinach couscous salad from Hello Fresh.
How was it, Karen? Did you like Hello Fresh?

Pizza with turkey pepperoni, mushrooms, sauteed sliced peppers, and mozz. I took a dough ball out of the freezer this morning and it's thawing (and hopefully rising!) in the fridge. I have some leftover pureed tomatoes from Saturday's goulash and I'll make some pizza sauce from that.

I did like last night's meal. Due to a glitch, I got two boxes yesterday, so we have double meals of everything. :lol: I cooked a double meal last night of cumin spiced steak with spinach, red peppers and couscous salad with a lemon/scallion dressing. My niece's fiance can't understand why I am trying it out because he says I am a good cook, but I'm interested in adding a little variety in. I wouldn't do this every week, but I think it's good to mix it up a little and try a few new things. The other meals for the week are lemon seared chicken with pesto, peas and potatoes and turkey chilies rellenos with poblano peppers and chipotle sauce. You pick three meals out of 6-7 choices.

Tonight is...something and corn on the cob, microwaved in the husk. WHY DIDN'T I KNOW ABOUT THIS SOONER? I've been buying frozen corn because I just could NOT handle the husking and the silk, and THIS IS SO EASY!!!!

Rick is on his own tonight.

A co-worker put his business card into the bowl at Red Robin and won lunch for our office! Since I'll be having a larger lunch than normal, I won't have supper.

a grilled cheese sandwich, possibly some soup, applesauce, a handful of mini pretzels, and strawberry jello.
I saw on TV this morning that today is National Pretzel day. I thought about you. They said that people can get a free pretzel at Wetzel's or Auntie Anne's.

When I want a pretzel I'll get one at my WalMart. They have a Sub shop there that sells the big soft ones. I like them with honey mustard and ranch dressing.

Homecooked corned beef and cabbage my mom made. I just had some for lunch and will have some for dinner too. :drool: I just can't get enough of cabbage.. I'd eat it every day if it was possible and not cause gas issues. :lol: My mom makes it PERFECT every time!
