Good idea but 1) lack of space and 2) one of the oldsters needs to get to the boxes in a hurry when his irritable bowel kicks in.
It could be that is why the cat acts the way she does.
Unfortunately, there's no quick or easy solution to the situation. It's up to the cat whether or not she decides to eventually trust you. All I can personally recommend is a lot of patience.
How old is your cat? Is she spayed? Are there other cats in the household? Any recent major changes (new environment, new people in the house, new other pets, etc)?
