Last night I had 3 gluten free apple pancakes with 1TB Butter, 3TB Maple Syrup, Diced Crystalized Ginger on top. The ginger was soooo good on it! I had the same thing for lunch today. Also had some dried blueberries and cherries on top, but they were a little tart for me.

I have no clue. I'm too tired to think about it. Actually got to bed and to sleep at a GOOD hour. Then Her Nibs decided to wake me up EVERY HOUR ON THE HOUR from 8 AM until noon, when I gave up and got up. Lunch and dinner will be whatever is on top of the pile. I don't even want to think about digging in the piles and choosing.

Baked chicken breasts (smear with mayo,some garlic powder,a little seasoned salt,a sprinkling of grated parm and some bread crumbs and bake),mashed potatoes and mexi corn.Delish!I will say it's not my concoction.I read it somewhere online and gave it a try,and happily so!
I used to do that, many years ago.. smear some mayo and some seasoned bread crumbs on a chicken breast and bake.. It was really good.. moist
Another one was with mustard, smeared on top, with some bread crumbs..

I need to try it again!!

I was craving Ice Cream...chocolate of some sort. There is a soft serve ice cream shop, 3 doors down from me. I can see the building, and the line; each time I look out my windows... It calls me...

I caved.. I got a small---really a large size of chocolate soft serve, in a cup.. sat on the beach wall, watching people, and the ocean, waves, boats.. and ate it...

I guess the sugar count for the day was not good: Oat milk Vanilla yogurt for breakfast, the soft serve and then a huge salad for supper: mixed baby greens, cucumber, black olives, celery, radishes, tomato, radishes, a hard boiled egg; with a "Robusto" EVOO and balsamic dressing... just poured each on.. It was good.. I was craving pizza. but I held back..

Where is Winchester Winchester ?

Leftover pasta with ragu for dinner. Tomorrow is Recipe: Maple-Mustard Chicken Thighs with bone-in things instead of boneless.
Winchester Winchester r has had some tuff times, along with Rick..... I spoke with her last week. I really do not know if she is returning or not.. I really miss her, and told her so.. also told her that she is an integral member of this site...

I'll make him some thousand island dressing for his salad.
He has great taste! That's the only dressing I like.

I know, if you order a small ice cream, they always give you a large. We figured that out as kids, saved a ton of money!


Dinner: Amys Quinoa Kale Red Lentil Soup with a piece of cornbread in the bottom of the bowl and more Quinoa added, garlic parsley salt, crushed red pepper flakes. I should have put cheese on top, but I forgot.

I haven't posted here in a bit, as I've gotten terribly out of the habit of cooking. Most meals are quick throw togethers, and not really interesting enough to post. For example, last night was raisin bread toast, cheese and apple.

Winchester Winchester Winchester Winchester r has had some tuff times, along with Rick..... I spoke with her last week. I really do not know if she is returning or not.. I really miss her, and told her so.. also told her that she is an integral member of this site...
Sorry to hear Winchester Winchester and Rick are having some tough times. If you speak with her again, please tell her we're thinking of them both, and hope she can stop by the site again soon.

Sorry to hear that. My dad is having that cataract surgery in a couple weeks. I hope it goes okay for him. For some people it is a fantastic success, but it sounds like there can be bad complications? He is going blind without it.

Most meals are quick throw togethers, and not really interesting enough to post.
But if you don't post & check in with them, the threads slow down & people drift away. Besides, that sounded interesting. Was the cheese and apple on the toast or on the side?

I don't post dinner too often anymore either. Last night we did a top golf parents night out date with stroller strides and there were a bunch of different appetizers, and the thought of typing all the ones I ate out on my phone is still unappealing the next morning.

I'm going to make this beef 'doner' for dinner tonight. My portion without tomato.

I'll try to get back in the habit of posting here. Maybe it will inspire me to make more interesting meals.

About last night's dinner, the cheese and apple were just plated beside the toast, so pretty boring.

The maple mustard chicken was good but.... The maple syrup was an issue. I bought a new brand from the supermarket, an organic one. The first time I had it with waffles I got an upset stomach afterwards. I noticed a slightly off smell / taste to the syrup. The "best by" date is in 2024 and the bottle was sealed when I bought it. The same thing happened with the one chicken thigh I had for dinner tonight :cringe: I really don't want to throw out the leftover 5 chicken thighs because of the maple syrup :ohwell: I'm throwing the bottle of syrup out (Golden Blossom Organic Maple Syrup).
