Today was cold,windy and snowy,so I made a big pot of split pea soup with ham ,and I had a toasted peanut butter and raspberry jam sandwich,and he had the leftover grilled cheese heated up.Plenty left over for another meal or 2,so into the freezer it went!

Pasta fazool with ham.

Took a container of home cooked cargamanto beans out of the freezer. Thawed and started to heat, slowly. Added cubed ham. Cooked mini farfalle. Combined with beans and ham, and added a ladle of the pan juices from the other night's stew. Very tasty and filling on a cold winter's night.

That looks so good! I wish they had a vegan version of that. My mother loved her Egg Foo Young.

Last night they had home made vegetable soup, (no chicken broth), Caprese Melt (grilled cheese with sliced tomato), coleslaw, fries and vanilla pudding. The server said she made the soup herself and it was so good. She told the cook that the vegetarian was going to like tonights dinner and she didn't lie.
I thanked her and said everything was delicious.

Yesterday was freezing, so all I wanted to eat was comfort food. So I had soup for lunch. And oatmeal for dinner. Today's another cold one, so we'll see what I feel like as meal time comes around.

Last night they had home made vegetable soup, (no chicken broth), Caprese Melt (grilled cheese with sliced tomato), coleslaw, fries and vanilla pudding. The server said she made the soup herself and it was so good. She told the cook that the vegetarian was going to like tonights dinner and she didn't lie.

So glad you finally got a real meal, muffy muffy . Hope it becomes a regular thing. :hearthrob:

I seasoned the chicken last night and threw it in the fridge. Today we're having rotisserie-style roast chicken; I'll throw it into the oven shortly as it roasts low and slow for about 4 hours. I took the stuffing out of the freezer (from Thanksgiving and I need to use it), will make mashed potatoes, and gravy, and maybe some green beans. A couple scoops of vanilla ice cream (from the Creami) for a bit of dessert.

Wow, that girl should take over! Everything sounds so good.

Lunch: Annie's Gluten Free microwave Mac & Cheese Cup. It was really good, but it said to cook for 2 minutes 15 seconds, and it exploded all over the microwave. I added salt, black pepper, Carolina Reaper superhot powder. It only made half a plate full, so I had a Cutie with it, which I think is either a Mandarin or a Clementine?

Dinner: Huge Dinner Plate Salad-- Lettuce, Cucumber, Bell Pepper, Onion, Cannellini Beans, Walnuts, Sliced Almonds, Shredded Cheese, 1 Hard Boiled Egg, Dried Cranberries, Target Organic Yellow Corn Tortilla Chips, Ken's Honey Mustard Dressing. The salad was really good with beans added!!!

I hope you are able to try it, I think you'd like it. :thumbsup: Although it doesn't taste like an omelette since it has it's own unique flavor and is served over rice. I order it with light sauce since I'm not a big fan of sauce.

Braciole with a diced mushroom / onion /red pepper and fresh breadcrumbs stuffing. Tomato paste and red vermouth stirred together and slopped over. Baked for about an hour in toaster oven with loaf pan tightly covered with tin foil. Didn't have orzo so side was cous-cous. Which I think might actually be better.

Still working at eating up what's in the freezer, although I did make a shopping trip to the Polish, Italian and Indian markets last week. I know what happens when you go grocery shopping when you're hungry. :oops:

I think today's dinner will be pierogi and maybe some kind of salad.
