Last night's dinner was So Good that it means tonight (whatever I end up making) will be a lesser meal. Yesterday we had sauteed shrimp with wild rice and microwave steamed fresh asparagus. Himself said he thought I gave him too much wild rice but he ate it all!

Marie Callender meatless chick'n pot pie with Gardein plant based chick'n. It's really good and it has 12 grams of protein and 440 calories for 1 serving. The whole box has 25 grams of protein and 940 calories.
How many servings is one pot pie? I always eat the whole thing.

You can't have oil anymore? Olive Oil is supposed to be healthy.

Lunch: Huge Dinner Plate Salad-- Lettuce, Tomato, Onion, Pumpkin Seeds, Thousand Islands Dressing, Garlic Dill Cheese Curds, Aldi Tropical Trail Mix Dried Fruit/Nuts, 1 Hard Boiled Egg, Late July Chia Quinoa Tortilla Chips, Parmesan Cheese, 1Tsp Hot Mama's Too Hot Habanero Sauce.

Dinner: Pasta Casserole Bake-- Penne, Shredded Mozzarella Cheese, Alfredo Sauce, Garlic Parsley Salt, Celery Salt, Cannelini Beans, Red Bell Peppers, Onions, Garlic, Cauliflower, Olive Oil, Sour Cream, 1Tsp Hot Mama's Too Hot Habanero Sauce.

:lol:i think it is but it has a lower smoking point than say canola once it hits that point it starts getting not so healthy cant say for sure its somthing i read a while back but i figure since i have a new non stik pan why use oil if its not needed

I have a hunk of top round London broil marinating in the fridge since last night. Olive oil, garlic, balsamic vinegar, pineapple juice, etc. I started with a marinade recipe from Paul Kirk, but then went my own way with it. Hope it's good. I'm going to do it in the NFG, on the Grill function, but since it's pretty thick, I'm going to use a thermometer probe for about 125F, then let it rest a bit. I'm thinking of throwing together either twice-baked potatoes or maybe some Hasselback potatoes. Melting potatoes would be good, too. We'll see how it goes. And, for some reason, I'm thinking about sugared carrots. Apple dumplings for dessert.

I had leftover farfalle pasta last night over spinach leaves and tonight I'm having my leftover Chinese food - steamed veggies with tofu and brown rice. I love leftovers especially when it's been a busy day. :thumbsup:

not really liking this new diet choice i made it is fun learning/trying to cook new ways and things though
It's all about the condiments, sauces, seasonings...


Lunch: 3 slices Gluten Free French Toast made with canned pumpkin and Chobani pumpkin spice creamer, maple syrup on top

Dinner: Leftover alfredo pasta casserole from last night, added 1Tsp Hot Mama's Too Hot Habanero Sauce, 1/8Tsp garlic parsley salt, 1/8Tsp black pepper, Late July Chia Quinoa Tortilla Chips

Last night I made a small batch of potato salad,and we had some baked beans in the fridge,so we had that and a hot dog with onions and cheese .Today we had dr's appointments and got our Moderna boosters,so leftover potato salad and Woods fried chicken was dinner.

Melting potatoes would be good, too.
I've never heard of melting potatoes, so I googled it. I didn't have any regular potatoes but I did have a sweet potato, and saw a recipe for melting sweet potatoes. WOW! They're absolutely amazing. Thanks!

I also made Just Bare chicken chunks, brushed with wing sauce to make "boneless wings". Pretty good.

You're not alone, I've been trying to get my husband off red meat for awhile. Even the doctor told him to reduce his intake. Too bad you don't live closer, the two of you could enjoy watching hockey together minus the red meat. 😉
hope he doesnt need to learn the hard way. like i have had to :lol:anna my gf cleaned out everything i like to eat last night:(even my box of sugar smacks cereal i have a fresh carton of vanilla almond milk with nothing to eat it with.:lol:the screws got clamped down snug and tight no wiggle room for me haha
