The last thing I wanted to do when we got home was start right in on dinner so I opted to make the easier dinner last night and we will have the lasagna roll ups tonight.

But seriously, do you have a recipe for the lasagna roll-ups? Thise sound awesome.

I haven't felt like making much. Made rice on Monday night and had deconstructed sushi, chicken wings and brussels sprouts on Tuesday, and had microwave burritos last night.

dunno yet gf being picky so i am getting a lil fristrated over all that i dont wanna eat this or that but offering no suggestions as to what she wants me to cook :lol: so it might end up ok i am just cooking what i want then:lol: and leaving you some bread and lunch meat to make your own dinner then
That's one way to get your point across! 😉

Breakfast for dinner, I'm in the mood for scrambled eggs with veggies and cinnamon toast. Fresh strawberries for dessert.

It was 45 here this morning!Bring on the soup making!I made a big pot of chicken vegetable soup with spinach (I didn't have any kale onhand)and made some homemade ditalini to simmer in it...didn't feel like noodles.So for dinner...he wanted leftover pizza.It's all good...soup tomorrow night!

Well, LUNCH a couple of hours ago was a Mom's Meal, Chicken with mushroom gravy, brown rice, and "seasoned" green beans...whatever that might mean...it does NOT mean any salt or pepper whatsoever. Added a touch of both, and it was quite good. Supper tonight will be...um...whatever box is on the top of the pile in the freezer. I do remember stacking them so that not all of the same protien will come up in a row.

Ingredients for every 4 roll ups:

4 lasagna noodles
1 chicken breast, cooked and shredded
1 cup mozzarella
1/3 cup parmesan cheese
salt & pepper
2 eggs
12 oz jar of pasta sauce
oregano to taste

Cook lasagna noodles to al dente. Create chicken mixture while the noodles are cooking:

1 cup chicken
2 eggs
1/3 parmesan cheese
1 cup mozzarella
oregano to taste

Mix well in a bowl. Lay a cooked lasagna noodle on a plate or flat surface like your counter, and spread the mixture. Roll up, and finish seam side down. Spread some sauce on the bottom of a pan if baking immediately. If freezing, spread sauce on the bottom of a freezer safe container. Lay the roll ups seam side down on top of the sauce. Repeat as many times as you are making. Top with sauce and mozzarella.

Freeze up to 90 days. You can cook straight from freezer to oven at 350F for 30 minutes covered. If you are baking after prep, bake in the oven, uncovered, for 25 minutes on 350F.

That looks really good. But not sure about cooking the carrots, as I'm thinking raw would be better. :dunno:
Did you have pistachios? I've never had them so don't even know what they're like.
The carrots were fine cooked - easier for J that way, but they'd probably be good raw as well.

Yes, my husband and I had pistachios in ours, but I couldn't find unsalted, just lightly salted. J didn't because full nuts are a choking hazard. My husband actually loves pistachios.

That looks good. When I'm able to eat cheese again, I'd love to make that with an alfredo sauce.

I'll have to buy some, and see if I like them or not.

So tonight I just microwaved up a Kraft Dinner mac and cheese cup. I added some peas to make it a bit more healthy. Mac and cheese is about the only food I eat that Ruby likes, so it gave me the opportunity to get a pic for the Pic of the Month contest. Here's an outtake.

I had some leftover sakad from last night. Added an apple cinnamon bagel with violife "cream cheese" because it wasn't enough for a full meal on its own.

J is really starting to get the hang of food and seems to be a big fan of carrots.

Lunch was meatloaf with diced, roasted potatoes and mixed "seasoned" veggies. Again, I'm not entirely sure what they consider "seasoning.' I'm beginning to think that they merely wave a piece of bacon or ham hock over the pot as it cooks. Added a bit of salt and pepper, and all was well. Supper will be whatever is now on top of the pile. Something beef, I know that.
