Lunch: Veggie stir-fry: olive oil, bell pepper, onion, celery, tomato, garlic, spinach, one diced hard boiled egg, stir-fry sauce, habanero hot sauce, black pepper, spicy fire salt, Korean pepper, cilantro, ground sage, cayenne pepper, plantain chips, diced up blue cheese.

Dinner: Huge dinner plate salad- spinach, tomato, cucumber, bell pepper, onion, carrot, crystallized ginger, dried cranberries, sliced almonds, kiwi, diced up blue cheese, flax/chia, 1 diced hard boiled egg, crushed up plantain chips, honey mustard dressing.

Thanks Mamanyt1953 Mamanyt1953 for recommending the honey mustard dressing. It was good!

I finally figured out what was making my stir-fries taste like road kill. It was the Extra Virgin Olive Oil! I switched to regular Olive Oil and that fixed the problem. Rachael Ray always recommends it, not sure why, it's nasty in stir-fry!

Stir fries generally require a high heat which extra virgin olive oil doesn't work well for because of the low smoke temperature. The high cook temperature pretty much kills the delicate flavor of the oil. EVOO is only good for sauteing, dressings, marinades, etc. Regular olive oil still has a low smoke temperature. I don't think Rachael Ray cooks stir fries, or at least not typical Asian stir fries at high temperatures. For high temperature cooking, you want to use an oil with a high smoke temperature. Vegetable and corn oil are good choices.

Leftover chicken thigh for dinner tonight with some quinoa.

Was your EVOO freshly purchased? Well, I suppose it could have gotten too hot and gone rancid even if it was freshly purchased, too. If it gets rancid, yeah, it can definitely make everything taste bad. Give any oil a sniff before you use it, if it smells stale/bad don't use it.

And like LTS3 said, oilve oil isn't best for stirfries. Plain vegetable oil or avocado oil will work. But always sniff! Nothing ruins a nice meal like rancid oil, ugh. I always have to buy the smallest oil bottle, otherwise it goes rancid before I use it, every time.

I haven't decided what I'll have for dinner yet. I really need to work up the ambition to make something good, just not feeling it lately. Probably microwave burritos again.

I knew that he was an ex con and he hires ex cons. I didn't know that he had sold the company but he used money to help ex cons and the company that bought it are also doing the same.
I also didn't know he had sold the company.

Tonight I had rice, peas and zucchini.

They have a new cook here. The food is still pretty much the same. Their side salads are better. They are making more vegetables cooked with bacon which really limits my choices. I mostly just stay in my room and eat my own food.

A new women moved in here and she does not eat chicken or beef, only fish and pork. She said tonight was the first time they did not offer fish or pork. I said welcome to my world. At least they have fish or pork for her almost every night. If I want protein I have to ask for cottege cheese, a peanut butter and jelly or grilled cheese sandwich. Who wants that twice a day, seven days a week.

I wasn't very hungry for dinner last night so just had a bowl of Honey Almond Flax Crunch cereal with almond milk and a honeycrisp apple for dessert.

I had a late lunch today so once again not too hungry. I'll probably have a giant sweet potato and cup of almond milk yogurt. I bought black seedless grapes this morning so will try them for dessert.

Yes, it's brand new. The regular olive oil tasted fine, but if you think a different oil would be better, I can experiment. We have coconut oil and grapeseed oil. I can get Canola too. I don't know what vegetable oil is, but I will check Walmart.

My stir fry type recipes generally tend to call for coconut or toasted sesame oil.
We have coconut oil. I'll have to try it with my stir-fry.

Lunch: Tried a bunch of my snacks on a plate, hated most of them. That's okay, process of elimination. :lol:

Dinner: Finally tried some of those spiralized zucchini noodles. It was a frozen meal though, so the marinara sauce was terrible. I'll try making it fresh sometime. It had potential, so I think I might like a different version of it.

For stir fries you want a neutral tasting oil so as to not overpower the flavors of the overall dish. Coconut oil isn't a good choice. Take a look here for the various types of cooking oils and what types of dishes they are best used for:

Usually a mix of various oils, canola/corn/soybean/sunflower/etc. Just a basic generic cooking oil. Canola is fine too. Very neutral tasting. If the olive oil tasted fine, no reason to change, but olive oil may end up clashing with some spices/seasonings so it might not always work for you.
