Was your EVOO freshly purchased? Well, I suppose it could have gotten too hot and gone rancid even if it was freshly purchased, too. If it gets rancid, yeah, it can definitely make everything taste bad. Give any oil a sniff before you use it, if it smells stale/bad don't use it.I finally figured out what was making my stir-fries taste like road kill. It was the Extra Virgin Olive Oil! I switched to regular Olive Oil and that fixed the problem. Rachael Ray always recommends it, not sure why, it's nasty in stir-fry!

Usually a mix of various oils, canola/corn/soybean/sunflower/etc. Just a basic generic cooking oil. Canola is fine too. Very neutral tasting. If the olive oil tasted fine, no reason to change, but olive oil may end up clashing with some spices/seasonings so it might not always work for you.I can get Canola too.
