I'm thawing out some of the grits casserole for tonight, along with a bottle of Blackberry Merlot to toast the New Year. Possibly the entire bottle. I want this new year to feel VERY welcome, and inclined to treat us well.
Actually? I wanted to see terms and conditions before I signed onto 2021!! :lol:

The Big Sandwich. I took a couple pictures, then realized that Dear Richard didn't add tomatoes. I was working on the wings, while he was making the sandwich. I don't know why I've always made the bread in a round pan; I have a square pan. I've just always done it that way. This loaf was not baked. Rick was very impatient!

I put foil on the main pan of the NFG, then put the AC pan in to Preheat. Added the wings. When the wings were done, I removed the foil and only had to wipe the main pan out. The AC pan went into the dishwasher. Before we went out to the shed, I put the brie in the main pan. 400F for about 20 minutes. The problem was that I didn't have any puff pastry, so I had to use Phyllo dough. The dough layers were way too thick....next time I'll have to remember the pastry! But it was still pretty tasty and we enjoyed it. Even after cooling for about 15 minutes, once I cut into it, the cheese flowed out. It was good, even with the phyllo and no pretty decorations on top, and with the darker crust. We enjoyed it with crackers.

Today's dinner will be pork and sauerkraut over mashed potatoes. And that's it. Really. I'm not making dessert as Rick is still working on that cheesecake. And we have cookies. If anything, I'll take an apple pie out of the freezer. But, to be honest, I'm about sugared-out.

It is much too early for me to have any clue what I will have tonight, which is actually my "tomorrow." Something very easy, though, because most of the evening will be spent taking down the tree, and storing all the decorations for next year.

I chopped up and sautéed some mushrooms and onion. Used half of it and made 4 Naan pizzas to go in the freezer for future meals.

With the rest of the mushrooms and onion, I added edamame, basmati rice and soy sauce, and made a bigger version of the fried rice from last week. Made enough for 3 servings, so leftovers. :)

Made pot roast in the slow cooker..aka crock pot,, Ut was delish!! so good. I added some sautéed onions, added some carrots, celery to the frying pan; just to get them warm and a bit of a coating of: dried parsley, thyme, roast garlic granules, ... did them in the same pan I browned the meat in...
Added baby Yukon Gold potatoes at 5 hours...

It came out so good... next time I will add more liquids.. I added just 1/2 cup mix of broth, wine and water...

Now, I know ho to tweak this.... The roast was just about 2 lbs.. cooked for 6 hours on high.. Meat was falling apart....

What is that?

Breakfast: 2 of those instant pancake mug cup thingys that you make in the microwave. Pretty good. I added butter and syrup.

Lunch: Fried bread dough with cinnamon sugar on top. Yummy. Also some Takis spicy chips. OMG these are sooo good and sooo spicy!

Dinner: We will be having an Aldi veggie gluten free frozen pizza with a cauliflower crust.

Left over lasagna.

I currently have a cheesecake baking in the oven. I cannot wait to dig into that tomorrow. I haven’t made cherry cheesecake in a long time. :yummy:
DH bought the ice cream maker attachment for my Kitchen Aid Mixer. We have the freeze bowl in the freezer. I suppose we’ll be making ice cream tomorrow. He already got started on the ice cream batter. :yummy:

It's a blend of frozen veggies...brocolli,cauliflower,yellow and zucchini squash,and carrots.I think it's put out by Birdseye,and I get it at WalMart.We think it's delicious!

I like to put ketchup on those.

Breakfast: 2 slices Great Value multi grain bread toasted, with butter and lemon ginger sugar. Half of a diced up Pinata apple.

Lunch: Snack plate! The other half of that Pinata apple, Flamin' Hot Dorito chips, Nabisco Veggie Thin crackers, one hard boiled egg, slice of my sharp cheese ball diced up, 1TB natural peanut butter, 1TB Aldi blueberry preserves, 1TB Target habanero salsa.

Dinner: Egg Frittata made with asparagus, frozen mixed veggies- peas, carrots, corn, green beans, cottage cheese, shredded mozzarella cheese, spices. I put 3TB ketchup, 1/2TB habanero hot sauce on top and stirred in a diced up microwaved Aldi vegan veggie burger.

Today I made homemade flour tortillas...a first for me...so we had shredded pork tacos with all the goodies.I thought they were yummy...hubby isn't a tortilla fan but he had one.They were big...like 10".I also made my own refried beans from a can of pinto beans...chicken broth,garlic and chili powder...also yummy.
