Spatchcocked and seasoned a whole chicken last night to throw into the Foodi Grill this afternoon. Making potato salad and sauteing a zucchini and a small yellow squash in garlic butter with Lemon Trinidad seasoning. I have some pineapple rings in the fridge that I need to get used, so I'm thinking about making a small pineapple upside down cake. Yum! Mint tea to wash it all down.

Didn't have the motivation to make the noodle casserole, so settled for a frozen brushetta panini. Noodle casserole tonight, maybe.

but I DO like to slice an onion paper-thin, place it on top of a slice of bread, top that with a slice of tomato, then swiss, and broil the whole thing.
I like thin slices of onion on my tomato and cheese sandwiches too. Sometimes I'll just put it in the toaster oven, and other times I'll "grill cheese" it in a frying pan.

Hubby has been extracting honey since Thursday,and he's not done yet!
From an actual bee hive. 🐝 If so, sounds interesting, and a bit scary.

Made a really fast, easy pasta salad with what I had on hand. Tricolor pasta rotini shapes, different types of tomatoes: black, yellow, red. All have a slightly different flavor, some Robusto EVOO, balsamic vinegar, basil, sliced black olives, some garlic infused EVOO, chopped cucumber, salt and pepper.

OMG! It came out so good. No onions—- do not like and cannot eat.

only thing missing was some shaved Parmesan.

I finally made my Noodle Casserole last night. And since it made quite a bit, tonight will likely be leftovers.

That does sound fascinating. But I also totally understand your fear of being stung!

OMGosh, that chicken was simply excellent. I use the seasonings from the Rotisserie-Style Roast Chicken, but put the butterflied chicken in the Foodi Grill and used the probe. I made a sauce from apple cider vinegar, balsamic vinegar, honey, tomato paste, and seasonings (my version of a Stephen Raichlen recipe) and slathered that on both sides of the chicken when it was almost ready to be removed from the Grill and plated with the foil. It was decadent; even Rick said it was really good....for chicken. We thought Tabby and Mollipop were going to pee themselves; they were that excited about chicken and we found pieces they could eat. They sat right on the kitchen table with us with their chicken on little saucers. (No, they're not spoiled....not in the slightest. Rick said that Hydrox would have been appalled; he was never allowed on the table.)

So tonight, it will be something with the leftover chicken. Maybe some creamed chicken over biscuits or little Yorkshire puddings. Or a chicken pie. I thought about chicken salad because of the heat, but Rick wasn't crazy about it. We'll see how it goes.

Since the veggie chili didn't happen Saturday I ended up making it last night and we had it over brown rice. Thankfully there will be lots of leftovers. DH picked up fresh rolls from the bakery so quinoa burgers tonight with my assorted veggie toppings. I have one pint of fresh raspberries left so that will most likely be dessert.

Hubby went to town this afternoon to get Otter at the vet (he had a dental today) and asked if we could have pizza so I called in the order and he went to Little Caesar's and brought dinner home.I had a couple of pieces of their cheesy bread and a sliced cuke from the garden.Yum!

I visited my friend with the phenomenal vegetable garden this morning. She dug and gave me some potatoes. That's the start of dinner but I needed to make something of equal quality to pair with them.

Aha! I have it.

Tillapia fillets, separated along the seam, dusted with flour, a little fresh ground pepper and some salt. Set aside. Slice up baby bella mushrooms, saute in butter and a little oil. Cut several shrimp into 4 pieces each, add to mushrooms. Set aside. Saute tillapia. Plate up thicker section of fish, add mushrooms and shrimp, set thinner portion of fish at an angle across everything and top with a thin slice of mandarin orange.

Potatoes had been boiling while fish was being prepared. When done slice up, add butter and parsley, plate up.

Ah summer. I must say, it was very nice dinner.

I"m impressed. I've seen it done, but lack the intestinal fortitude. I have issues with knives. Saturday night I had to go to the ER for two stitches because I stabbed myself IN THE BACK! I've always said I shouldn't be allowed out alone...now I wonder if I should be allowed IN alone!

Tonight...macaroni and cheese...with hot dogs and onions!

Dear Richard went up to the garden yesterday while I was snapping beans and came back down with six zucchini and yellow squash. One zucchini is mammouth; where that came from I have no idea. So I'm thinking of getting the spiralizer out and making some marinara sauce. Not sure about the yellow squash yet, but am thinking of making a quiche and some muffins tomorrow. Tis the season for squash!

Oh dear, I hope you're okay now. 🤗 Maybe you should use plastic knives in the future. 😉

One zucchini is mammouth; where that came from I have no idea. Not sure about the yellow squash yet, but am thinking of making a quiche and some muffins tomorrow.
Does that mean zucchini muffins? I love anything zucchini so if you bake muffins please post a pic in the Quarantine baking thread so I can drool. 🤤

My mother had the strange idea that dull knives were safer. Not so, because you have to use more force to cut. Be careful, yes, of course. But sharp knives and a pair of kitchen shears might be safer for you.

Last night we had another roasted chicken leg quarter. I had mashed potatoes with it. The girls were not interested in those though.

It's national mac & cheese day. I may cook a box of Kraft 3 cheese and call it a day.

neely neely I have cut myself with a plastic knife. I was cutting a bagel. The knife snapped in half and the jagged end of the half that was still in my hand got to my other hand and sliced it open. DH looked at it, looked at me, shook his head and said, "Only you. Only you." :lol:

Took two thin sliced boneless pork cutlets and bashed them thinner / larger. Dipped in flour, then egg, finished with breadcrumbs and let sit, to set the coating. Sauteed baby bella mushrooms, set aside. Browned pork cutlets (call it schnitzel) then added a splash of red vermouth, some canned crushed tomatoes - not much, and the mushrooms. Lid on pan and let slowly simmer for about 30 minutes.

Boiled 3 more of the garden-fresh potatoes. Put through Foley food mill when done, them mash with butter and a little of the water they cooked in.

Microwave steamed broccoli.

Meat was fork tender, mashed potatoes great to sop up the sauce, and broccoli was a good choice for green side dish.
