Leftover rice from the other night and since I figured I might as well cook was was in the freezer bag there was some leftover shrimp but not two servings . . . what to do . . . I know! Shrimp fried rice! with carrot, celery, broccoli, mushroom. Nice!

Well, last night I took the last cup of au jus left from the pot roast and made biscuits and gravy. It really turned out well, and the gravy still carried the flavor from the veggies that I cooked with the roast. I had never tried that before, but I really like it! Tonight...dunno. I was thinking of fish sticks, as I feel a little tartar sauce-ish, but someone mentioned omelets, and that sounds awfully good, too!

Needed something quick last night, so I just had some of my IKEA veggieballs and some french fries, plus an orange for dessert. Not sure about tonight, though I have a potato I should use up. Baked potato? Oven roasted? Maybe potato salad?

I just took shrimp out of the freezer. We'll do them on the grill tonight and have them over a big salad. Two garlic-parm rolls. And mint iced tea. (Yesterday, by dinner time, it was so windy that there was no way we could do our burgers outside. I ended up doing them in the Foodi Grill. I may have to do that with the shrimp today, too. The wind has been so bad around here again.)

It rained all day yesterday so I didn't get a long walk in, therefore, didn't have much of an appetite. Dinner was lentil soup with half a roll and baby carrots, honeycrisp apple for dessert. I bought all the ingredients for a pasta casserole but not sure if that will happen tonight or not. :dunno:

I took some chicken thighs out of the freezer yesterday to thaw for tonight. And what happens when I open this thread? I find AbbysMom AbbysMom recipe for French Onion Chicken! That's what we're having for dinner. No, I don't have Vidalia onions. And no, I don't have Swiss cheese. And I'm not running to the store. I'm making do with what I have. But I'm trying this out tonight. I love French onion anything! Stay tuned!

Last night, we had what I think will be the last of the asparagus from the garden. A good drizzle of olive oil and sauteed til just tender-crisp. Sprinkled with Tuscan Seasoning (Penzey). Then I let it cool down just a wee bit while I did the shrimp, also with a good drizzle of olive oil and another sprinkle of more Tuscan Seasoning. Threw it all together in a big salad with the last of the lettuce, a chopped tomato, a bit of onion, some carrot, the last of the broccoli. And it was good. Served with a garlic-parm roll (thawed and microwaved) from the freezer.

Let me know how it comes out! Next week is my every 4 weeks big shopping and I was planning on getting the ingredients.


I have no idea yet what we are having tonight. I plan on working out in the yard today so it depends how tired I am.

Last night's dinner was roasted chicken, baked potato for him or ?sweet potato for me, and petite whole green beans.

The reason I question sweet potato is that this came from the farm stand and when I sliced into it, it was pale yellow inside. I'm used to orange, but the whole yam vs sweet potato business confuses me. Anyhow it tasted different, but fine.

I had sliced carrot / celery / onion into the bottom of the roasting pan, added water. When we were done with dinner I pulled the meat off the carcass, broke it up and put in pot. Scrapped veggies and juices from roasting pan into pot. Simmered for the longest while, and now have a quart of good rich stock.

And lots of chicken for future meals.

C catapault Himself's bd dinner sounds amazing! My mouth is watering!

I had SPAM yesterday!! Kaylee fried it, then grated Swiss cheese and I had it open-faced on toast.
I am now an official member of Spam Club. She only cooked half the can so she'll do the other
half today.

I think I'll order Asian food. It will enough for 3-4 meals over the weekend.
