Thanks, Winchester Winchester ! What a great site. She really covers everything. I’m going to experiment with the rising time and also find a warmer (cat proof) place to let it rise.
I watched a YT video the other day and the woman used her Instant Pot to proof cinnamon roll dough. She used the yogurt setting. I thought it was a great idea if you have one.

That's pretty cool if you have an Instant Pot.

Normally I just let the dough rise in the microwave (not turned on, just in there so the cats don't get at it). But the kitchen has been so cool lately that I've been using the Proof cycle for the oven.

Earlier this week I made a pan of applesauce brownies. Rick's birthday is on Monday, so I may make some snickerdoodles for him this weekend.

You are going to love that mixer! My Big Red KA is Empire Red, too; that particular red wasn't my first choice either, but it was the last mixer at WS at the time at that price and Rick said we couldn't pass up the price. I use it when I'm making double and triple batches of cookies.

And you can't beat that price! Kudos!

Are you baking more lately? What are you making?
A little bit, more than usual.

In the last week or so, I've made peanut butter cookies and a banana bread. Yesterday I made cornbread. Usually I make muffins, but tried using a 9-inch round cake pan, and it turned out really good. Better than the muffins ever did.

I'm putting together Mother's Day baskets for my stepdaughter and daughter-in-law with mini bottles of prosecco, wine-infused chocolates :yummy: and flowers from our garden.

I think I'll have to make something to send the grandkids, or they'll be trying to steal the chocolates. :lol: Maybe some frosted sugar cookies, that seems to be their favorite.

Yum! I was getting ready to bake some chocolate chip cookies for the grandsons this afternoon, but maybe I'll do bars instead, that would be faster than cookies. :thumbsup:

I am irritated with the NY Times today. They have a notice that covid-19 information is free at this time. Some of their covid-19 culinary information is freely available, like the snickerdoodle pound cake that I showed Winchester Winchester . Today they have an article with 21 recipes for quarantine baking, sections for easy, intermediate, advanced. Click on any of the links and they want to know my account. So I enter my (free) account information and it wants me to buy an account for cooking in order to access these recipes.

Does this not seem like bait-and-switch to you?

Yes, I agree it does sound like bait & switch. :agree: But what irks me even more is that they know people are home because of Covid-19, many unemployed, financially strained, struggling to make ends meet, sick or have family members who are sick. And in spite of all this they try to take advantage of the pandemic situation by asking to buy an account for their recipes. :frustrated:

neely neely I made some yesterday from this recipe. Don't mind the little bit missing from the corner. :paperbag: Well, I had to taste them to make sure they were good before I send them off to the kids, right? :lol:

I put together a birthday bag for him with the theme of 'birthdays in the time of COVID' with a roll of t.p., masks for him and his wife, and a crossword puzzle book and some blowing bubbles for when they're sitting around bored. :lol:

And I totally understand a corner missing from the pan of your cookie bars - isn't that what all good bakers do, i.e. a taste test? ;)
