Originally Velveeta was made from real cheese. Today, it's mainly whey protein concentrate, milk protein concentrate, milk, fat, and preservatives. Not sure. Last night I broiled a lamb chop and had veggies with it. The girls and I shared the chop. I saved a piece of it, warmed it a little and cut it up into little bits this morning. That went in their breakfast. They were pretty happy about it.

Remember my red beans and smokehouse ham from a couple of days ago? Tonight I'm going to semi-puree remaining beans, dice some more ham. The usual mirepoix trio of carrots, celery, onion added to the broth and simmer until done. Cook some pasta - small shells I think, and add in. Will probably make another batch of corn meal muffins to go with - call it thick soup or thin stew.

DH and I are tired from our mission to find toilet paper today, we went to four stores. So we will probably have something quick and easy, i.e. Trader Joe's Lentil soup with a salad on the side. I also snatched a Dark Chocolate bar with slivered almonds for dessert.

Ham and bean soup for me, split pea soup for Rick, both from the freezer. I'll make some muffins to go with.

ETA: Changed my mind! I found a Cooks Country recipe for Kung Pao Shrimp. It caught my eye and I'm going to make that instead. Over brown rice.

Lentil Stew with Couscous
I was thinking of buying this Moroccan Couscous:

For dinner I made one of my little 2 serving casseroles. It was enchiladas with those corn tortillas, lentils, onion, garlic, bell peppers, pasta sauce, cilantro, cheese. I forgot to put the Mexican spices- cumin & cayenne pepper! But I did add hot sauce. Baked it in toaster oven for 30 minutes at 350 degrees uncovered. The corn tortillas still tasted like plastic! :lol: But the overall flavor was pretty good. Wish I hadn't forgotten the spices!

M maggiedemi what brand are the corn tortillas? I use Maria & Ricardo, and they don't seem plastic-y to us.

Dinner tonight was grilled salmon fillet with my usual grainy mustard, brown sugar, and Ponzu glaze, finished with a squeeze of fresh lemon. Sides were jasmine rice, and fresh asparagus steamed in one of those microwave bages.

Heat up a dry cast iron frying pan. Add tortilla. heat briefly until there are a very few brown spots on the side in contact with the pan. Grab (I use my fingers but I guess you could use a spatula) and flip. Heat until there are a few brown spots on that side. Remove from pan, fold in half, cover with dish towel. Continue heating, flipping, folding until there are enough to feed us. Fill. Serve.
