That looks fancy! I like Dr. Oetker products, I'll have to see if I can find it.

Amy's vegetable pot pie
I love those vegetarian pot pies, but they never have them at my grocery stores anymore.

For lunch I switched things up a bit! I had a mug of Cinnamon Espresso Hot Cocoa with 2 slices of peanut butter rye toast. The hot cocoa was really good, it tasted like a cappuccino or latte because of the espresso in it.

For dinner I had the rest of that ricotta tomato sauce pasta dish that I loved with a spoonful of Tabasco hot sauce on it.

M maggiedemi and the other non-meat eaters here, I saw this plant based dinner menu and thought I'd share:)


I haven't looked at the full recipes so I don't know if the recipes call for something you might not have such as an Instant Pot or uses hard to find ingredients.

I'll start prepping for the chicken and wild rice pilaf in another hour or so. I'm so slow at meal prepping 🐌 I have to sear the 6 thighs in batches since my pot only fits 4. Instead of "wild mushrooms", I'm just using regular white button mushrooms and re hydrated shiitake mushrooms.

Tonight I am having broccoli and tofu.
Sounds yummy. I'm really liking broccoli lately. I had it in an omelette from a diner & in a frozen lasagna this month. :yummy:

For lunch today I had 3 pieces of rye toast. 2 had crunchy peanut butter on them and 1 had butter on it. I used to hate crunchy peanut butter, but now I kinda like it. That's a lotta carbs at one meal isn't it? :ohwell:

For dinner I had Pizza Hut pizza with Mushrooms, Spinach, and Pineapple on my half. I am really liking spinach on pizza! I'm also really liking their hand tossed pizza. I only got it because the cheapskates are charging $1 extra for pan pizza and I'm too cheap to pay it. So that was a nice suprise that I like it even better. :thumbsup:

Thoughts on the chicken and wild rice pilaf: easy enough for me to make, just needs a bit of time to prep before it can cook away in the slow cooker (that would be an hour because I'm 🐌). 3 cups of broth was too much. After 5 hours of cooking on LOW, there was way too much broth still left. I changed the setting to HIGH and let it go for another hour but it didn't help much. The wild rice was definitely cooked, just more creamy risotto-like than perfectly moist fluffy rice. The recipe does state that the rice comes out very soft. It's not just soft, it's mushy and slightly soupy:rolleyes: I think 2 cups of broth would be better especially since the mushrooms and carrots will release liquid too. Picture after I portioned it out into dinner-sized meals:

It's a bit bland but I didn't add a lot of salt and used unsalted broth.

Yesterday, we celebrated Christmas with our kids. We made ham and cheese sliders, potato salad, crock pot beans, macaroni and cheese. I put together a bit of a relish tray with a couple dips. My BIL had given us a quart of his canned dill pickles (they went fast!). And they had peanut butter swirled cheesecake for dessert.

My oven went wonky on me again on Saturday, only this time, it went high. And, of course, I was baking the cheesecake. The top got a bit too brown. I was able to "disguise" it with a swirl of whipped cream and some crumbled up Heath bars on top. They said it was really good. I don't eat cheesecake, so I wouldn't know. I even had the timer set and set it for about 15 minutes under the required time. And it still came out too brown. I'll wait until after the holidays, but I really need the appliance weenie to come in and calibrate the oven. And if it's the thermostat going bad, I can see a new oven in our future. Dang

Anyway, tonight's dinner will be leftovers.

I threw some frozen meatballs, peas, brown rice and pizza sauce in a pan. It was good :)
Took your idea, Furballsmom Furballsmom , Googled, and found this: Vegan Meatballs With Rice and Peas Smothered in Tomato Sauce

Then made my own version using my IKEA Veggie Balls, Minute Rice* and Edamame, as I had no peas. Mixed some Pizza Sauce over the veggie balls, and voila dinner was served. Pretty quick, and tasted pretty good too. Here's a pic:

*So about Minute Rice, it's quick and tastes ok, but but I know there's much better rice out there. Any recommendations, anyone?

You didn't put any sauce on the rice?
Not this time. Just cooked it with a bit of butter and a pinch of salt.

For lunch I had a veggie sandwich on rye, but for a twist this time, I added fresh avocado slices!
Yum. I have an avocado currently in my fruit basket waiting for it to ripen.

I typically use uncle Ben's rice.
I've used that in the past, but tend to prefer the Minute Rice brand.

I like Basmati rice. I rinse it very well before cooking.
In a pinch, I buy the single serving, semi-cooked rice cups, basmati rice. Not bad, in a minute from the microwave.
I looked at those single serve cups the other day. Next time I'm out, I'll buy a couple to try. I do like my quick and easy meals. ;)

Vegetable Lo Mein
That's my favorite!... Is Vegetable Lo Mein always vegetarian? Next time I will ask them, but they don't speak English very well at the one here.

For lunch I had a veggie sandwich on rye with cashews added.
For dinner I had a shelf stable noodle dish, Annie Chun's Yakisoba. It was okay. I didn't like how they cut the veggies so small that they tasted like paper. I prefer big chunks of veggies so I can taste what they are.

I just wonder if they ever use fish sauce or chicken broth in vegetable lo mein. I'll try asking them, but they always have problems understanding me. I wish they would have at least one employee that speaks English.

I don't know. I never thought about about it. Let me know if you find out. I am kind of getting away from Chinese food anyway. I am sure they cook it on the same grill as meat.
