Since we were out of town for Thanksgiving our neighbor brought over a generous portion of her cranberry & wild rice quinoa casserole. I added falafel to it and it made a complete dinner for me. Honey crisp apple and clementine for dessert.

I would think it would be okay to post, since it's something that you are thinking of having for dinner sometime soon.

It probably won't be anytime too soon, though. So pics of a possible future dinner are ok and still on topic? :paranoid: :paranoid:

I bought some of those store made fried chicken tenders from the grocery store yesterday. I might have that instead of more bland chicken tonight.

I had grapefruit from a can for breakfast. I put salt on it this time. I still hate it! :p

I think grapefruit is something that you either like or really hate. I like pink grapefruit once in a while. When I was a kid the grapefruit diet was one of the trendy diets. My mother tried it and she ate a lot of grapefruit. My parents both liked it.

I forage for chanterelles.
I've only ever had the regular white button mushrooms, but whenever I hear of chanterelles, I think of a character on Buffy, that gave herself that name. 🍄

Not sure what I'm having tonight. Will figure out something later, once I decide if I'm in the mood to cook, or have something quick and easy.

In the "fun forums" like the Cat Lounge, this food section, etc. we allow people to chit chat a bit more than in the more serious areas like cat care or IMO, within reason. You can discuss mushrooms, special diets, recipes, etc., but if you think it's going to be a very extended discussion, then you can start another thread. :)

I am over all of the Thanksgiving food. I froze the rest of it yesterday and we had pizza delivered last night. I haven't left the house since Tuesday, so I think we may go out to eat later before the bad weather starts. A salad sounds good right about now.

I haven't been posting much since last winter, when I was cooking from scratch every day. It got too hot for me to cook, so catching up on what was for dinner the last 6 months was "cold and easy" (and boring) - lots of peanut butter and/or tuna sandwiches, fresh fruit and cheese, and anything else that didn't require turning on the oven, including too much takeout.

With the cooler weather I'm back in the mood for cooking. Yay! Last night and leftovers tonight, I'm having pan-fried pork loin medallions and spiced skillet rice with baby lima beans.

My favorite way to make "perfect" rice is in a skillet. The trick is in toasting the rice in oil, then adding herbs for a minute or two (and then veggies, if desired) before adding the water or stock.

This lady is showing classic Spanish rice...I follow the "technique", but use whatever herbs/spices I feel like that day, plus add some thawed frozen veggies with the water right before covering to cook.

I've got a simple beef stew in the crock pot (slow cooker) going right now. And I got a fresh french loaf that I'm loading up with butter to eat with it. It's only 10 am, and the house already smells amazing. I'm going to have to smell this all day waiting for my dinner.

Potato leek soup and a crusty bread. I finished making the soup and realized it really needed some ham in it. Fortunately, I had just bought some deli ham a couple days ago, so I chopped it up and added it. Perfect dinner and enough for a few freezer meals.

For lunch I had my usual veggie sandwich, but this time it was on a huge wheat bagel from Price Chopper, toasted.

For dinner I had the last two of those Dr. Praeger's spinach cakes with ketchup on it, and macaroni salad from BJ's with hot sauce on it. That's the first time I've had hot sauce all week. I've been good. :)

Where do you get the spinach cakes at? They sound good but I don't think I would like ketchup on them.

It must have been either Price Chopper or Walmart. We only have 2 grocery stores. They taste good with ketchup on them because they have eggs in them. I always put ketchup on my eggs. Do you eat eggs or are you Vegan?

I posted pictures of some of the available mushrooms at the grocery store in the new mushroom thread If anyone has suggestions on recipes to use the mushrooms with, feel free to share :)

I ended up having those chicken tenders for dinner. A bit too salty for me but otherwise good with just ketchup on the side.

I am not vegan. I was vegan for 17 years but I gave it up when I could not stand to go without pizza anymore. I will eat eggs in pan cakes or something sweet but not in vegetables. I just find them gross.
