I've eaten cottage cheese cold billions of times. You can use it like ricotta in lasagna.

How do you cook those?

I have some frozen avocado slices that I haven't tried yet.

Do you put anything else on it or do you just pour the baked beans on the toast?

I had my can of succotash for dinner. It was weird, I wasn't sure what to do with it. It was in a soupy tomato sauce.
You could put cheese or butter on the toast before you put the beans on if you want but I think that the traditional way is just to warm the beans then pour them onto the toast. I've never tried it but as a carb lover, I can't see how it could be anything but good.

ETA: We ate succotash when I was a kid. It came frozen in a bag and was just corn and lima beans. I really liked it. If you like those, you might find it in your grocery store.

I just put butter on my toast. I don't know if the British add anything to their toast. I believe they use Heinz beans or make their own.

I never had succotash with tomato sauce. That sounds good. I usually just add butter and salt to succotash when I eat it.

SOMEWHERE I have a recipe for killer black bean burgers. I'll try to find it. If I can, I'll post it here for you.
I'm always looking for another veggie burger recipe to try, so hope you are able to find it.

My daughter loves this quick and simple recipe for black bean burgers:
Easy Vegan Black Bean Burgers (6 ingredients, 15 minutes)
That sounds good, and definitely quick and easy. Will be trying it for sure.

England eats baked beans on toast.
I like un-toasted oatmeal brown bread with baked beans, with just a bit of butter or margarine. Sometimes I'll put a few of the beans on the bread, but other times I just alternate a spoon of beans, then a bite of bread. Really yummy. And for vegetarians/vegans, beans and bread = complete protein.

I've eaten cottage cheese cold billions of times. You can use it like ricotta in lasagna.
I usually use cottage cheese in lasagna. I'll have to try ricotta next time.

It's delicious. It's much finer than cottage cheese and is just slightly sweet. It's creamy and very yummy.
I might like it then. The lumps in cottage cheese always turn me off. What do you eat with the ricotta? Fruit?

The lumps are just cheese I think. It's good with salt or hot sauce on it.

Lunch-- We have some hard boiled eggs in the fridge, so I will slice one up and add it to my veggie sandwich today. I think we ran out of tomatoes. :bawling: So it will probably be egg, lettuce, walnuts, cheese, mayo. Maybe some onions if I feel like chopping one.

I just wipe them off (but you can wash mushrooms, they really don't absorb the water), brush lightly with EVOO, and grill for a couple of minutes on my electric grill. Pop on a bun with your chosen toppings, and dig in!

This is the one I used...there are LOTS of them out there.

If you haven't tried Amy's roasted vegetable pizza you need to. It's so good. I thinly slice half of a large shallot and add that along with some sliced black olives and it's even better. The balsamic vinegar takes it up a notch and their crust is really good. Better than just about all frozen pizzas I've tried and I've tried a lot of them. Amy's Roasted Vegetable Pizza

They are right. You won't miss the cheese.

Quid pro quo
What does Quid Pro Quo mean? I see that all the time lately.

My sandwich tasted weird yesterday. I think the hard boiled egg & walnuts clashed in flavor. I'm still learning which foods taste good combined with each other and which don't.

For dinner I kinda made my own succotash. It was canned Mexican corn and canned butter beans with butter on them. Also had a baked potato with cheese on it.

M maggiedemi Quid Pro Quo essentially means "I will do this for you, IF you do that for me"

Before I left for work yesterday, I asked Rick to get something from the freezer for dinner last night. Well, he forgot. He was outside raking up leaves for the last time, so when I got home, I fed supper to the girls and then started rooting around for something for supper. And then I saw the cheese in the fridge. We had macaroni and cheese last night for supper with a bit of creamed lettuce. Rick dearly loves mac and cheese, so it worked out. And there's enough leftover for another meal, unless Rick eats it for lunch.

Alton Brown's Fried Macaroni and Cheese Recipe Has anybody ever made fried mac and cheese? Don't laugh; it is excellent. Use the Panko, not regular bread crumbs. for the the best "crispy".

I find that raw Walnuts can sometimes be surprisingly strongly flavored, almost a little bitter. I like baking with them, I guess the heat neutralizes that flavor.

Yesterday there was a request for lasagna. I'll have to check if that's still wanted now that it's actually today, especially since I heard an exclamation after the weekly weigh-in ;)

~ Pay no attention. It has to do with the fiasco known as politics - specifically the ongoing impeachment hearings.
Have a nice meal that you enjoy and think about happy things. Then tell us what you had ...
