I'm getting out the crockpot to make DH a roast for dinner tonight and onion roasted potatoes in the oven. Since winter came a month earlier than usual I thought he could use a good comfort meal. As for me, I plan to have broccoli & cauliflower with falafel.

Last night I had a veggie burger out of a box, Price Chopper brand. I think I should make my own veggie burgers. These are rather bland. They were okay when I added a pinch of salt. They are soy-free, made with a bunch of veggies & chickpeas in them.
There's so many different frozen veggie burgers out there, some good, some not so good. So don't give up yet, as you may find one you like. I have a couple veggie burger recipes that I make, but homemade ones tend to break apart for me, whereas the store bought ones don't.

I had Heinz baked beans in tomato sauce on the side, the ones rubysmama rubysmama rubysmama rubysmama recommended. I love them! They are less sweet than regular baked beans, more savory.

The Thai Basil Beef was super easy to make and yummy :yummy: The only thing I would do different next time is to not add the cooked rice noodles to the beef mixture and stir it together to warm. That just causes the rice noodles to fall apart. Next time I'll just put a serving of rice noodles into a bowl and top it with the beef mixture. The picture in the cookbook shows exactly that but the directions say to mix the noodles with the beef mixture and then dish up to serve :rolleyes:

Thanks for the chart. Tonight I had leftover baked beans and french fries baked in the oven. Hopefully that was enough protein. It's hard knowing what foods to put together!
I found another chart that might be helpful.

On another thread you mention that you brought soy-free veggie burgers. Is there a reason you can't eat soy?
I can eat soy. But there's all these warnings saying too much of it is bad for us.

For lunch I had the rest of those baked beans on toast with Swiss cheese on it. I read that people in other countries eat them on toast. It was okay, but it needed something, maybe some spices.

SOMEWHERE I have a recipe for killer black bean burgers. I'll try to find it. If I can, I'll post it here for you. And, if you like mushrooms, and I'm quite fond of the darling little fungi, a grilled portobello mushroom cap makes a very nice burger!

You may want to try adding slices of fresh avocado, i.e. very nutritious and lots of health benefits in it. Just a suggestion. :wink:

If I did not eat soy I would get very little protein. Beans, lentils and peas upset my IBS-D so I can eat very little of them and cheese raises my cholestorol. I love tofu.
England eats baked beans on toast. I have it for breakfast sometimes. I like Bush's beans.

I know you can eat cottage cheese cold, but I never have.
I've eaten cottage cheese cold billions of times. You can use it like ricotta in lasagna.

Do you put anything else on it or do you just pour the baked beans on the toast?

I had my can of succotash for dinner. It was weird, I wasn't sure what to do with it. It was in a soupy tomato sauce.
