I got home early enough to make a proper dinner tonight so it will be pasta casserole with fresh ricotta and parmesan. Salad and baguette on the side.

ETA: I almost forgot fresh strawberries and blueberries for dessert.

I'm not sure what to do about tonight. PART of me says, "Oh, go ahead, EAT half of that loaf of banana nut bread you baked yesterday!" Then the rational part says, "ARE YOU FREAKING NUTS???" I am still feeling a bit "bake-ish," though, so maybe scrambled eggs and biscuits.

OH...I baked a total of four loaves of banana nut bread, although three were promised. And a pecan cake with caramel glaze. I could so easily put myself in a sugar coma...

Someone was a busy beaver. ;) Why not have scrambled eggs with banana nut bread and hold the biscuits for another night?

I did make tuna and noodles last night. Rick ate two huge helpings, then went back for a smaller third serving. He looked at me and said, "Man, I love this stuff!". Coming from a man who never liked tuna and noodles when he was a kid, that is high praise indeed. And he really does "love this stuff". Take out the cream of mushroom soup (that's how his mom made it), make your own cheese sauce, and it's just good stuff.

So I'm thinking of having leftover tuna "stuff" tonight, along with a simple chopped salad.

Winchester Winchester Pam, when you've got a chance could you tell me how you make the sauce for the tuna and noodles? Thanks

Today for lunch I had a bowl of Cabbage soup from Valley Cafe, a diner here in town. I also had a Buffalo Chicken sammie with crumbled blue cheese and shredded lettuce and buffalo sauce, very spicy, amazing! Their portions are huge!

The sammie probably weighed about 3/4 of a pound. I was only able to eat 1/4
of it so I'll have something to munch on over the weekend. I also had my helper pick up some danishes, and glazed donuts, oink, oink. I've lost about 10 pounds in a week and I need to eat. I woke up this morning so hungry and I had a headache from not eating. It's rough without the Vincie girl and my poor Cal keeps looking for her. She is eating way too much, ha!

I like it because you can order a burger at 7:00am or pancakes at 2:00pm.

Of course, it's really simple, nothing fancy but we like it a lot. Will send you a pm over the holiday weekend.

Met my cousin and his lady friend for lunch today. He's my cousin by marriage, i.e. his wife who was my favorite cousin passed away 2 years ago. I have to admit I was a little hesitant about seeing him with someone else but since he's in his late 70's I was happy he found companionship. I ate more than expected at lunch so light dinner of granola and almond milk for dinner tonight but I might have room for a coconut milk ice cream sandwich for dessert. ;)
