I make up 5 pounds of meatloaf mix at a time, cook them in large muffin tins (they bake in no time flat), then wrap the individual servings in cling wrap and freeze. Each meatloaf muffin is about one serving. Maybe two muffins. Easy as pie!The meatloaf I made yesterday has three pounds of meat in it (!), so a good portion of it is definitely destined for the freezer and future meals.
