You would not want my help. I am a poor excuse for a vegetarian. Neely, Norachan or Rubys'mama would be better at helping you.
muffy muffy : there's no such thing as a "poor excuse for a vegetarian", so don't ever think that.

There may, however, be vegetarians who eat well all the time, but I am not one of them. That is probably why I rarely post my meals, as I'd be embarrassed sometimes to post that all I had was a piece of cheese, a muffin and an apple. Or cinnamon toast and some grapes. Or crackers and peanut butter and a peach. I do, though, love fresh fruit, and will have something even when the rest of my meal is pretty lame.

I do eat better than the above examples, most of the time, even though a lot of my meals involve things like canned beans mixed with canned tomatoes, with instant rice. So not exactly gourmet cooking. ;)

Tonight I had crockpot baked beans, which made enough to put several servings in the freezer for quick meals.

M maggiedemi : let us know when you're ready to start eating vegetarian, and I'll try to help you find some meals that you might like.

Thanks everyone for your kind post. They gave me a good laugh when I needed one.

I hope everyone makes it through the hurricane all right. We are not suppose to get too much of it. We went to the grocery store today and pick up some food, cat food, TP, water and batteries in case the electricity goes out. I hope everyone else is prepared.

Whatever Dear Richard decides to do about dinner is fine with me.....but it better not involve any type of poultry! I've even had my fill of poultry!

Although I will say that our chicken pot pie last night was tasty. Til I got home, I was lazy, so I made 6 rolled biscuits instead of a crust. Just as Rick pulled up the driveway, I was able to take the pot pie out of the oven. We enjoyed our dinner.

I pulled a beef, bean, and cheese burrito out of the freezer to heat tonight. Think I'll make a quick enchilada sauce after work to smother it and bake it with some extra cheese melted on top. I may also pull some Spanish rice to thaw in the fridge as a side.

How do you make Enchilada Sauce? I know it probably has Cumin in it.
I don't have an exact recipe I follow, but I "throw together" a Tex-Mex enchilada sauce with a flour roux, chicken stock, lots of chile powder (I like I mix of ancho and smoked chipotle chile powders), cumin, garlic and onion granules, oregano, salt and pepper. No tomatoes allowed in a good Tex-Mex enchilada gravy!

We are well out of the hurricanes wrath but hope our friends stay safe.
Tonight the dogs are having turkey hearts and turkey wings because I'm a cheap piece of crap and forgot to buy them new stuff so it's freezer burnt stuff for them.
Cats will have chicken hearts and more rabbit. They LOVE rabbit.
I'm no longer hiding in the shed pretending to do stuff and I think we're having leftovers. Fine with me. Those burgers and rice were pretty darned tasty.

They are now saying on our local news that we are only now going to get a little rain and some wind. At first they were saying that it could get bad and for everybody should go to the store and get extra food and supplies. I have some very big trees in my back yard that worry me to death this time of year.

I had a roast beef sub from Wawa. It was really good. Their bread is awesome.

Speaking of subs, my job decided to get lunch for us tomorrow (Thursday). I was talking to the girl who sent the email out and asked her where they were getting the subs from. She said they were coming from Publix (our local grocery chain) and they were getting Italian, ham, turkey and chicken. This is the conversation that followed- verbatim.

Me. What about the vegetarians? We have at least a few
Her: She (referring to her supervisor who was in charge of it) said that they can have the turkey and chicken
Me: :headshake:
Me: Vegetarians don't eat chicken or turkey
Her: Oh, that's right. I better go tell her so she can call the store. :ohwell:

So her supervisor assumed that being vegetarian meant that you don't eat beef or pork but chicken and turkey were fine. Why would anyone assume that and NOT ask? :runaround:

It's a good thing I was feeling nosy and went over there. The subs come from the store with the meat and cheese on the bread and the veggies come separately. There are a number of reasons why someone would not eat meat and depending on the reason (ex: allergies), just taking the meat off the bread wouldn't be good enough. I'm curious to see how this works out.

Kat0121 Kat0121 That boggles my mind. We have a few vegetarians here and I could just see their reactions if we said, "Oh, just eat a chicken or a turkey sub". Heads would roll. Whenever a luncheon is done, they always take the vegetarians into consideration.

I think I'm going to make up a vegetable salad tonight. I have some Blueberry Balsamic vinegar that I want to try as a bit of dressing. Maybe I'll throw a few blueberries into the salad, too.

Yeah. I wish that surprised me but it doesn't. I told some of the vegetarians and they just rolled their eyes. I go to lunch soon so we'll see what they did.

Some people think if they're not eating red meat, they're vegetarian. :headshake:

In fact, when I first became vegetarian, I posted on a veggie forum for a while, and it was common for new "vegetarians" to post and say they only ate chicken, or only ate fish. :rolleyes:

Don't tell them that the stuff they eat is (usually) very cheap. I have them all convinced that tripe, poultry hearts and livers cost a billion trillion dollars a day and they would crap if they knew how inexpensive some of this stuff actually is :lolup:

We had an incident with a tree and all was OK at the end of the storm, but I know how that feels. I'm not allowed to cut down one of the old, craggy one that looks like a well aimed sneeze could knock it over.
Stay safe in this storm anyhow...rain and wind is excellent cat snuggling and comfort food weather. :D

I don't think I've typed "leftover" so many times in my life. Leftover, leftover, leftover. It's lost all meaning now.

Dogs are getting some chunks of turkey and some chicken wings. We scored big on chicken wings and they're all :yess:

Us, we're going to play a little game.
We pull everything out of the fridge, set it on the counter, stare at it, and then create a weird dish out of whatever.
A few times ago I had a carrot, a spoon full of cottage cheese, half a jar of olives and a slice of cheese. Not filling. At 1:00AM I was sneaking around the kitchen making some boxed mac and cheese in my underwear.

tonight i'll heat up a serving of turkey enchilada...lasagna. last time i made enchiladas, i decided to make it 'lasagna style', and then slice it like i would a beef lasagna -- that worked out really well! :agree:

i'll have sliced tomato with blue cheese salad dressing, and some apple crisp -- later in the evening. :yummy:
