Last night, I had a mac and cheese.. it was so-so... think they forgot to add the cheese to the cream sauce... but I was not about to dump it out.. should have, but did not...

tonight is, I think, soup of some kind.. quick and easy.. perhaps one of the dehydrated bean soups I picked up; Tuscan Bean Soup or Pasta Fagiol.. you are supposed to cook for 20 minutes with water; however, I may use chicken broth instead.. more calories, but it will make it so much heartier..

or just minestrone, or tomato soup.. from Trader Joe's...

Beef stew. I took a small chuck from the freezer yesterday before I went to work. I'll make it in the pressure cooker tonight. With some apple wheat muffins.

Tonight? Chicken and rice soup with crackers, I think. I'm STILL shaking off the last of this flu.
Yick, the flu is the worst :(
I hope you shake it soon.
tonight was take out as I had a knife fight with a carrot yesterday.
Needless to say, the carrot won!

Last night we celebrated National Pizza Day.

So tonight I'm heating up the last of the beef stew and we'll have it over onion Yorkshire puddings. It's really quite good, better than it probably sounds. With a bit of a chopped salad.

@1bruce1 I hear you about those knife fights. On Thursday when I was chopping an onion, the onion slipped on the cutting board. The knife got my index finger instead. Not too badly, so a mere bandage and I was back in business. But I've had many a knife fight....and lost. Hope your finger is OK.

Actually, it sounds YUMMY! I love Yorkshire puddings!

Tonight I may actually bake that frozen pizza that's been sitting in my freezer calling my name! I think my tummy is up for it, but I'll make the final decision later. There's still a can of soup left, and that sounds pretty good, too!

Sticky apricot chicken again :yummy: I used a little too much apricot preserves and it came out a bit too sweet (it was a reduced sugar type preserve, too) but I cut that with sauted swiss chard and lemon.

Turned my kitchen into El Restaurante de Tex Mex today. Cooked up some beef and cheese enchiladas in ancho chile sauce, Spanish rice, borracho beans, and a guacamole salad with sour cream.




I have a suspicion that I'll be eating enchiladas for a while now. Hard to make a "single serving"...

Rick beat me to the beef stew yesterday. We came home from running errands. I was working in the basement for a while; when I came upstairs, I smelled something. Walked into the kitchen and Rick was eating the beef stew for lunch. I told him it was supposed to be for dinner. He looked at me and said, "Oops". I hadn't said anything, so he thought it was fair game. He opened a can of soup for dinner; I didn't feel like eating much, so I let it go.

I took some chicken breasts out of the freezer last night for tonight, not sure what we're having yet.

Ok, I'll be right over, what's on the menu tonight?
Leftover sausage/pepper/onion pan pizza from Friday for lunch and leftover enchiladas for dinner. :crackup:

Not much to clean up there, but cooking for someone else would sure cut down on the leftovers repetition!
