My husband caught fish on the weekend so battered fish, chips and salad.
Good on him!  What was the fish?

I'm taking myself out for a big lunch.. don't know what I'm having, but dinner will be pumpkin soup..

The fish is Estuary Perch. The fisherman informs me it's an oily fish so it's very high In omega 3. I did not know that!

Never heard of it.. I'll keep an eye out for it.

It blows me away that when you go to the fish shop nowadays and ask if the fish is local, they presume you mean 'does it come from Australia'? !!  Most of what we get from fish shops and restaurants is imported!

So I now only eat fish that my friend's husband has caught.. often it's Whiting.

We picked up steaks last night for guest tonight. Love grilling out. Maybe since it will be just me and my husband steaks on the 4th too.

Pasta with cannellini beans, spinach, 'shrooms, and roasted red peppers. (I forgot to get something out of the freezer last night, so I'm winging it. But it's meatless, so it works.)

Chicken and bacon pasta. I just had a yummy lunch. A salad with greens, red onion, mini tomatoes, apple and Danish feta.

Hot sausages (Rick will have his in a sandwich) with steamed potatoes and broccoli.

(Next time anybody goes to Penzey's, check out Brady Street Cheese Sprinkle. It's good stuff and 2 calories per teaspoon.)

That pasta last night was actually pretty good. I sautéed onions and minced garlic and threw that into the mix. Halved some grape tomatoes, gave them a quick sauté and threw them in, too. Some basil and oregano. Topped it all off with a wee bit of crumbled blue cheese....just a wee bit, enough for taste. I love blue cheese.

Thanks, Mani. But somebody (might have been on this board) said one time that if you have pasta, beans and a few fresh vegetables, you have dinner. I kind of agree with that. You can always throw this and that together and who knows what you'll come up with. I use less pasta and a lot of veggies.

Making Mexican shredded beef for use with gluten-free soft white corn tortillas, will add onion, tomato and green pepper, top with a bit of cheddar cheese and sour cream.  Big salad from garden.  One tiny square of chocolate & blueberries (is a 1/8th serving) with my decaf espresso.

I didn't feel like cooking, so I stopped and got us some Turkish take-out. The place makes its own pita bread, which is delicious.

Rick is making his famous (family-famous, that is) hamburgers; he's stuffing them for a nice change. A bit of macaroni salad and some fire and ice tomatoes.

Feel like grilling today on the FOURTH!!! But, we have no grill. :lol3: YET. I think we will go out to our favorite burger/brewery place for dinner tonight.

We went out and I had a chopped shrimp salad. It's really way to hot and humid out to start the grill.

What are fire and ice tomatoes?
Here you go (they are delicious! They're a lot like the marinated cucumbers that my mom used to make, but with a bit of heat):

Fire and Ice Tomatoes

5 large tomatoes, cut into wedges
1 medium onion, sliced
3/4 cup white vinegar (I use cider)
6 Tbsp. sugar
1/4 cup water
1 Tbsp. mustard seed
1/4 tsp. cayenne pepper
1 large cucumber, sliced

In a large bowl, combine the tomatoes and onion and set aside. In a small saucepan, combine the vinegar, sugar, water, mustard seed and cayenne. Bring to a boil and boil for one minute. Pour over tomatoes and onion and toss to coat. Cover and chill for at least 2 hours. Add the cucumber and toss to coat. Serve with a slotted spoon. Yield 8 servings.

One serving (3/4 cup) = 72 calories, 1 g fat (trace sat fat), 0 cholesterol, 11 mg. sodium, 17 g. carbs, 2 g fiber, 2 g protein.

A salad. I have a few pieces of chicken thawing and I think I will add chickpeas, zucchini, cucumber, red opinion, lettuce, and whatever else I find in the refrigerator.
