What's for dinner? - 2016

We ended up having homemade hamburgers on the bbq. My mom and sister came for dinner so I made something we could all eat. We will have taco salad on Monday.

We had our Reubens Friday night. Yum. The only thing was that I didn't add enough Thousand Island dressing when I made them and that was easily fixed.

Sourdough pizza tonight. I took some cooked chicken out of the freezer to make BBQ chicken pizza. Should be good! It's just the sourdough pizza crust, homemade apple butter BBQ sauce, the cooked chicken, red onion slices, and smoked provolone cheese.

Roast chicken with a wonderful sauce, sweet potatoes, coleslaw and a green leaf salad.

had a huge grilled cheese of Russian rye (black bread)  and some chips...lots of sodium but so good! 

And then some vanilla ice cream with a drizzle of chocolate sauce...yum!

I ended up having a beef dip sandwich and caesar salad. It was good but I had to bring it home to eat because my son was being a bum at the restaurant.

Dear Richard has requested meat loaf for dinner today. I'm thinking of making roasted potatoes and perhaps some butternut squash.

For dinner last night, I had leftovers that my culinary students produced for class on Friday.  My advanced students produced a southwestern inspired version of Cordon Bleu. Cordon Bleu (which was popular during the 70's) featured a chicken breast stuffed with Swiss Cheese and ham that was breaded and pan fried until it was a crisp golden brown on the outside and the cheese was melted on the inside. My version featured a chicken breast stuffed with crispy bacon, Pepper Jack cheese, and green chilies. After breading the chicken, the students pan fried it in olive oil and then finished it in the oven. The chicken was plated with a Cajun dish of  red beans and rice.


For dessert I had a trio of berry glazed tarts. I had made two dozen and had set aside 1 1/2 dozen for the volunteers at an animal shelter.

We had our meal this afternoon when we came from church. It was grilled T-bones, fresh salad, potato salad left from last night's supper.
